VINIFICATION AND AGING | The grapes are allowed to mature on the hillside until the second half of October, then they are subject to a lengthy steeping followed by ageing in steel barrels for at least three years.
TASTING NOTES | Smooth, burgundy-coloured red wine, with dark ruby reflections. The taste is full-bodied, persistent, with a winning softness and with sensations of great flavor.
PAIRING | Particularly suitable with elaborate first courses, game, typical seasoned spicy cheeses and truffle-based dishes.
This is a wine for “the few”, produced in limited quantities during excellent harvest only, and available in strictly numbered bottles. They never make more than 3,000 numbered bottles and sometimes less. You may ask yourself who gets to keep bottle #0001, you may think the family or the wine maker but you would be wrong. The family and Baroni Capoano have provided wine to the Vatican for the church to use in the sacrament. To pay respect to their history and friendship with the church bottle #0001 is hand delivered to the Pope from each new vintage.
