VINIFICATION AND AGING | The aging process varies in terms of duration (between 18 and 20 months), choice of French wood (the soil and sub-soil of each forest provides specific tastes), and degree of heating wood while making the barrels. Regular racking set aside the fine lees, clarifying the wine. This process is topped by a smooth fining. Then the wine is ready to be bottled.

TASTING NOTES | Pure dark cherry aromas with subtle woodsy notes. The palate is soft with nice fruit tannins and delicate fruit. Easy, classic, and food friendly.  

PAIRING | This wine is perfect for grilled and roast lamb with garlic and rosemary, steak, especially richer steak dishes such as tournedos rossini, Japanese-style steak dishes. Roast duck, Christmas turkey, Roast beef, veal and venison, ox cheek and other stews cooked in red wine. Hard British territorial cheeses such as Cheshire and red Leicester and French Mimolette. Also, oddly Bacon and Eggs.
